I love vegetarian cuisine and this recipe is a keeper :) I've never attempted to cook anything with a Portobello Mushroom before, but I've been wanting to sooo badly! Yesterday I had a go at it, and I am so proud of myself for making something yummy with something I've never cooked with before! I will definitely be making more of these.
I used the recipe here for the sandwich filler. The only thing I changed is that I didn't use parsley and I didn't grill mine (I can't find my George Foreman!). Instead I broiled mine on low in the oven (for the same amount of time specified for grilling in the recipe). With this being the first time I've made it-I don't know how much of a difference it would make being grilled-but I definitely want to try it grilled since that's what the recipe says.
After completing the recipe in the link above, I toasted a sandwich roll in the toaster. I then spread crumbled goat cheese on each slice. Microwave the desired amount of goat cheese for 10-15 seconds-it spreads really well :) Place grilled stuffed mushroom cap between bread slices and enjoy! I served mine with a fresh peeled kiwi and a glass of iced water with lemon. I hope you find it as yummy as I did :)
